Recipe - Snowman Chocolate Bark (Christmas)
December 10, 2024
Ready for some healthy Christmas recipes? Here we go! ⛄️
INGREDIENTS:
- 9 ounces sugar-free chocolate chips
- 27 mini marshmallows
- 1 teaspoon white sprinkles
- Pretzel sticks cut into 1/2 inch pieces (for the arms)
- Edible ink markers in orange and black
DIRECTIONS: Line a small 9 x 13-inch sheet pan with parchment paper. Set aside.
Using the edible markers, make a snowman face on 9 small marshmallows. Plan where you will be placing the snowman so they will be easy to cut equally later.
Have your pretzels cut and ready because once the chocolate hardens they won’t stick.
Pour the chocolate into a medium microwave-safe bowl. Melt the chocolate in the microwave, stirring the chocolate every 30 seconds to help avoid seizing.
Once melted and smooth, set aside. When you’re ready, pour chocolate onto the prepared baking sheet, spreading with a rubber spatula into a smooth layer almost to the edge.
Quickly add the marshmallows to create your snowmen, then add the pretzel arms and lastly add the sprinkles, for snow.
Allow the bark to set completely in the refrigerator, about 30 minutes. Once hardened, break into 9 pieces about 1 ounce each. Keep bark stored in an airtight container refrigerated or in a in a cool, dry place for up to 1 week.

Review - The Flight Girls
December 08, 2024
AUTHOR: Noelle Salazar
NARRATOR: Xe Sands
RATING: ★★★★
Summary (from Goodreads): Inspired by the real team of female pilots who trained World War II soldiers, The Flight Girls is a stunning debut novel about friendship and its power to make us soar. Audrey Coltrane has always wanted to fly. It's why she implored her father to teach her at the little airfield back home in Texas. It's why she signed up to train military pilots in Hawaii when the war in Europe began. And it's why she insists she is not interested in any dream-derailing romantic involvements, even with the disarming Lieutenant James Hart, who fast becomes a friend as dear as the women she flies with. Then one fateful day, she gets caught in the air over Pearl Harbor just as the bombs begin to fall, and suddenly, nowhere feels safe. Following the attack, Audrey struggles to reconcile her devastating losses--colleagues, friends and the piece of her heart she left in the air. She seizes the opportunity to join the Women Airforce Service Pilots, hoping to make everything she's lost count for something. The fast friendships she forms with her fellow WASP women reignites a spark of hope in the face of a war that moves closer to home every day. When James goes missing in action, those bonds help her summon the courage to cross the front lines and give her the faith that they will return stateside--together.
REVIEW: Dear readers, if you've read any of my reviews over the past couple of years then you already know I'm a huge fan of historical fiction. You should also know I'm a big fan of Noelle Salazar too, so this review will probably come as no surprise to you. I don't know why it's taken me so long to read The Flight Girls, but I'm so glad I did. I believe this is the first historical fiction book I've read with the bombing of Pearl Harbor as a focal point, and Noelle does such an amazing job (as always) describing the horrors from that day and really putting you in the heroine's place so that you can see it and feel it from her perspective. The narrator, Xe Sands, also did an excellent job portraying the heroine, Audrey, and the many other characters in the story. This was my first time listening to her, and I look forward to listening to more of her work.
So many emotions come to the surface while listening to this book. I laughed. I cried. I swooned. I gasped. The friendships between the women pilots is so endearing, and I loved cheering them on. I clapped over their accomplishments and fumed over the disheartening lack of recognition they endured. My heart ached for them during their times of loss and soared with them through their times of joy. I felt like I knew each one of them by the time the story ended, thanks to Noelle's incredible storytelling. The ending was beautiful and perfect, and I was honestly sad when the story ended. I highly recommend The Flight Girls to everyone.

Recipe - Leftover Turkey Pot Pie Gratin
December 01, 2024
INGREDIENTS:
- 1 cup 1% milk
- 1 ¾ teaspoons kosher salt or 1 chicken large Bouillon cube
- 3 sprigs thyme, plus ½ teaspoon fresh thyme leaves
- 2 sprigs sage
- 1 tablespoon unsalted butter
- 1 ½ cups from 3 large halved and sliced leeks (white part only), cleaned well
- 1 ½ pounds leftover turkey breast, 4 ¾ cups
- 3 cloves garlic, minced
- ¼ teaspoon fresh black pepper
- 2 cups frozen peas and carrots
- 3 tablespoons parsley, chopped
- ¼ cup cornstarch
- 1 pound 4 to 5 medium Gold or Red potatoes, peeled and sliced ⅛-inch thick with mandolin
- 2 cups low-sodium chicken bone broth, divided
- 4 ounces shredded Gruyere cheese
DIRECTIONS: Preheat oven to 375 F. In a large oven safe enamel deep skillet with a fitted lid, bring the milk, ¼ teaspoon salt or bouillon cube, thyme and sage to a simmer over low heat 5 minutes, until aromatic. Pour into a bowl and set aside. Wipe the skillet.
Melt the butter in the skillet then add the leeks, cook 4 to 5 minutes, until soft. Add the garlic and cook until aromatic, 1 minute. Add the cooked turkey, 1 ¼ teaspoons salt, black pepper, 1 cup of the chicken broth, peas and carrots, 2 tablespoons parsley and thyme and cook 3 to 4 minutes.
Add ¼ cup cornstarch to the remaining 1 cup chicken broth and mix well, pour over the turkey and cook, stirring until thickened, 3 to 4 minutes.
Smooth the turkey mixture in the skillet and top with the sliced potatoes starting from the outside, overlapping the potato slices in a spiral until you cover all of the meat. Remove the sage and thyme from the milk and pour over the potatoes, top with Gruyere cheese; cover the skillet tightly with foil or a lid.
Bake on the second rack from the top of the oven, until the potatoes are tender when pierced with a knife, about 1 hour. Remove the lid and broil until the cheese is slightly browned and golden, about 3 minutes. Garnish with remaining parsley.
