Review - Book Lovers

Which is why she agrees to go to Sunshine Falls, North Carolina for the month of August when Libby begs her for a sisters’ trip away—with visions of a small-town transformation for Nora, who she’s convinced needs to become the heroine in her own story. But instead of picnics in meadows, or run-ins with a handsome country doctor or bulging-forearmed bartender, Nora keeps bumping into Charlie Lastra, a bookish brooding editor from back in the city. It would be a meet-cute if not for the fact that they’ve met many times and it’s never been cute.

If Nora knows she’s not an ideal heroine, Charlie knows he’s nobody’s hero, but as they are thrown together again and again—in a series of coincidences no editor worth their salt would allow—what they discover might just unravel the carefully crafted stories they’ve written about themselves.

REVIEW: Such a great story! Emily Henry never disappoints. There were SO many times I caught myself laughing out loud while reading this book. The witty banter between the characters was top-notch and very entertaining. The only reason I didn’t give it five years was due to the angst between Nora and Libby. Their dependency on each other and their anxiety over it seemed overly dramatic at times. Still, I love a great rom-com, and I would highly recommend Book Lovers to those of you out there who love them too.

Recipe - Baked Creamy Corn Casserole

Many years ago, I used to make a full-fat version of this recipe, and it was delicious, so I'm curious to see how this lighter recipe turns out. I'll keep you posted, and if you've tried it, let me know what you think about it. 

INGREDIENTS:
  • 1 (15 ¼ oz.) can sweet whole kernel corn, drained 
  • 1 ( 14 ¾ oz.) can cream-style corn, not drained 
  • 8 oz. box corn muffin mix (like Jiffy)
  • 1 cup non fat plain Greek yogurt 
  • 2 large eggs whites 
  • 3 Tbsp. light butter, melted
  • 1/2 cup reduced fat cheddar cheese (optional)
DIRECTIONS: Preheat oven to 350 degrees. Spray a 9×13 or 3-quart baking dish with nonstick spray. Set aside. In a large mixing bowl, whisk together the egg whites and non fat Greek yogurt. Then add in the two cans of corn and muffin mix. Mix until well combined. Add melted lighter butter and light cheese, if using, and continue mixing until all ingredients are incorporated. Pour into the prepared dish and bake uncovered for 35-40 minutes or until golden brown. Remove from the oven and let stand for 5 minutes before serving. 

Servings: Makes 10 (1/2 cup) servings; 6-7 WW Personal Points per serving.  (The points will vary based on your individualized plan.)

Recipe - Greek Yogurt Cake

This Greek Yogurt Cake is SO GOOD! According to my calculations, it’s 3 points per serving. I topped it with light whipped topping for one additional point. Next time I’ll buy some strawberries to put on top. YUM!

INGREDIENTS:
  • One box sugar-free yellow cake mix
  • 2 containers (5.3 ounces each) vanilla Greek non-fat yogurt
  • One cup water
DIRECTIONS: Preheat oven to 325 degrees. Using an electric mixer, mix all ingredients together in a large bowl on medium speed until smooth. Spray a 9x13 baking dish with cooking spray and pour cake batter into dish. Cook for 34-38 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely. Cut into 16 servings.
