Recipe - Yogurt Pie with Date Nut Crust

INGREDIENTS: 
  • 15 medjool dates (with the pits) 
  • ¾ cup walnuts 
  • ¾ cup unsalted roasted almonds 
  • ¼ teaspoon kosher salt 
  • 1 ¼ cups whole milk greek yogurt (the thicker the better)
  • 1 teaspoon vanilla bean paste or vanilla extract 
  • ½ teaspoon orange zest 
  • 2 teaspoons honey 
  • 1 ½ cups mixed berries (sliced strawberries, raspberries, blackberries, blueberries) 
  • Nonstick cooking spray 
DIRECTIONS: Add the dates to a bowl and cover with very hot water. Cover and let sit for 15 minutes. Drain, pat dry, and cut in half, removing the pit. Spray an 8-inch pie plate with nonstick cooking spray and set aside. Add the soaked dates, nuts, and salt to the bowl of a food processor fitted with the blade attachment. Pulse together until the mixture is finely chopped. The mixture should hold together when pressed between your fingers. Transfer the mixture to the prepared pie plate. Lightly spray your hands or the bottom of a flat dry measuring cup with nonstick spray and gently press the crust out to cover the base and the sides of the pie plate. In a medium bowl, mix together the yogurt, vanilla bean paste, orange zest, and honey. Spoon the mixture into the pie plate and smooth into an even layer. Arrange the fruit in your desired pattern. Loosely cover with plastic wrap and refrigerate for 1 hour before serving. Slice into wedges and use a small offset spatula to remove the slices.

Top Ten Tuesday - How My Blogging Habits Have Changed

Hello, dear readers! This week’s prompt from Jana at That Artsy Reader Girl is ways in which my blogging habits have changed over the years. Since my blog isn’t very old, the list will be smaller than ten. Do any of these resonate with you? Happy Tuesday!

🥗 More Than Just Books - I started off with the intention of blogging ONLY about book reviews, but I’m not a fast reader, and I knew there wouldn’t be many posts if I stuck with that trend. So, I decided to add other things I enjoy, like recipes. 

No Time for Bad Books - Life is short, so if I can’t get into a book within the first few chapters, then I will move on to something else. That’s one reason you’ll more than likely never see a book review with less than three stars on my website. 

🎧 More Than Print Books - The first few reviews on my site are from print books only. I didn’t listen to my first audiobook until I started working as a librarian in June of 2021. Now, with a 45-minute commute to work, I fill that time listening to audiobooks, and I’m so glad I decided to give them a try. I LOVE them. 

📚 The Whole Truth and Nothing but the Truth - Once upon a time, I was so worried about offending people with my book reviews, especially the authors. I used to write romance books several years ago, and I know how scathing reviews can sting, but if I’m not being honest then I don’t feel like I’m helping anyone, so I try to remain truthful. (Still, I don’t like writing bad reviews, and that’s another reason I only start and finish books I really enjoy).

Recipe - Pineapple Chicken Stir Fry

INGREDIENTS: 
  • 1 lb boneless skinless chicken breast (cut into 1-inch cubes) 
  • 1 tbsp fish sauce (or soy sauce)
  • 2 tbsp cornstarch 
  • 1 tbsp oil (divided) 
  • 1 tsp garlic (minced ) 
  • 1 tsp fresh ginger (minced) 
  • 2 cups bell peppers (assorted colors cut into 1/2-inch cubes) 
  • 1 chopped red chili pepper (optional or to taste)
  • 1 cup fresh pineapple chunks 
  • 1/3 cup Thai sweet chili sauce 
  • cilantro leaves (for garnish) 
DIRECTIONS: Mix chicken and fish sauce in medium bowl. Add cornstarch; toss to evenly coat. Set aside. Heat 1/2 tablespoon of the oil in large nonstick skillet on medium-high heat. Add garlic and ginger; stir fry 30 seconds. Add bell peppers, chili pepper if using, and pineapple; stir fry 3 to 5 minutes or until peppers are tender-crisp. Add sauce; cook and stir until heated through. Remove from skillet. Heat remaining oil in the skillet. Add chicken; stir fry 5 minutes or until cooked through. Return bell pepper mixture to skillet; stir fry until well blended. Garnish with cilantro.

Hello, dear readers! I'm having surgery Monday morning, and I won’t be able to tend to my little free library for the next two to three weeks, so I gave it a little overhaul today. Review - The Griffin Sisters’ Greatest Hits

On the brink of adulthood in the early 2000s, destiny intervened, catapulting the sisters into the spotlight as the pop sensation the Griffin Sisters, hitting all the touchstones of early aughts fame—SNL, MTV, Rolling Stone magazine—along the way. 

But after a whirlwind year in the public eye, the band abruptly broke up. 

Two decades later, Zoe’s a housewife; Cassie’s off the grid. The sisters aren’t speaking, and the real reason for the Griffin Sisters’ breakup is still a mystery. Zoe’s teenage daughter, Cherry, who’s determined to be a star in spite of Zoe’s warnings, is on a quest to learn the truth about what happened to the band all those years ago. 

As secrets emerge, all three women must face the consequences of their choices: the ones they made and the ones the music industry made for them. Can they forgive each other—and themselves? And will the Griffin Sisters ever make music again?

REVIEW: I’ve read several of Jennifer Weiner’s books, and one thing I’ve noticed that’s true in most (all?) of her stories is there’s always a big girl. Now, don’t get me wrong - I have nothing whatsoever against that. I’m a big girl myself, and so I really appreciate when an author includes a plus-sized heroine in their book. The problem, for me, starts when the author focuses TOO MUCH negative attention on the heroine’s size, which was the case with this book. Every other sentence is either Cassie (the character in question) thinking horribly about herself because of her weight or some other character saying horrible things about her weight. Believe me, I can truly understand Cassie’s lack of self-esteem and self-confidence about her body, but the negativity in this book was too over the top for my liking. Neither of the sisters, Cassie and Zoe, have any redeeming qualities. Cassie lets people walk all over her because she thinks she deserves it, for some strange reason, and Zoe is the entitled one who’s gorgeous and uses that to manipulate everyone around her. Those are my main gripes with The Griffin Sisters’ Greatest Hits. It had the potential to be a wonderful story, but it leans heavily toward Taylor Jenkins Reid’s Daisy Jones and the Six. The way the characters talk and dress feel like it should be set in the late 70s or early 80s and not 2003 and 2024. (And Cassie resembles the late singer Mama Cass so much in this story it’s hard to differentiate the two). I wanted to stop listening halfway through this audiobook, and the only thing that kept me going was Dakota Fanning, who is a great narrator. If you enjoy books with a bunch of family dynamics and the love/hate relationship between sisters, then you will probably love this book, but it was, unfortunately, a big miss for me. Fingers crossed Weiner’s next book will be a bit more uplifting and positive.

Top Ten Tuesday - Books that Surprised Me

Hello, dear readers! Today’s Top Ten Tuesday prompt from Jana at That Artsy Reader Girl is all about books that surprised me. Do any of these resonate with you in the same way? I'd love to know. Happy Tuesday!
 



1. The Invisible Life of Addie LaRue by V.E. Schwab - No one remembers you. Spend all day in a room talking to the main character, Addie, and she’s erased from your memory the minute you leave her presence. The plot was intriguing as much as it was heartbreaking. 
2. Redeeming Love by Francine Rivers - A devout Christian man falls in love with a prostitute and marries her. You would think this arrangement is doomed from the start, but it’s actually an incredible love story. 
3. Before We Were Yours by Lisa Wingate - This book shocked me when I discovered the villain, Georgia Tann, was a real person who was born and raised in a small community ten miles east of where I live. 
4. Verity by Colleen Hoover - If you’ve read this book, then I don’t have to explain myself. It’s a wild ride. If you HAVE read it, did you believe the letter or manuscript? Curious minds want to know.
5. Remarkably Bright Creatures by Shelby Van Pelt - The author gave one of the main characters, an octopus named Marcellus, a voice. Sounds crazy, but it works, and it’s one of the most beautiful stories I’ve ever read. 
6. Nothing to See Here by Kevin Wilson - Characters spontaneously combust. How can that NOT be surprising? 
7. Fourth Wing by Rebecca Yarros - I've never cared much for fantasy books, but I couldn't put this one down. 
8. Tomorrow, Tomorrow, and Tomorrow by Gabrielle Zevin - This story is mostly about gaming, so I immediately went into it thinking I wouldn't like it because I've never been into video games, but this book was actually very good. 
9. Beautiful Ugly by Alice Feeney - I can count on one hand how many suspense/thriller books I've read in the past ten years, and stories like this are one of the main reasons why. Overall, I'm glad I took a chance on it, but plots that are too far-fetched just aren’t my thing. 
10. Wild Dark Shore by Charlotte McConaghy - Wonderful book but the ending BROKE.MY.HEART. I didn't just cry - I SOBBED. I yelled in disbelief while listening to the audiobook. If you had passed me on the road, you probably would’ve thought I’d lost my mind. I never saw it coming, and that's really all I can say about it without giving away any spoilers.

Recipe - Carrot Cake Muffins

INGREDIENTS:
  • 1 ¼ cup all purpose flour (or gluten-free flour mix) 
  • 1 ¼ teaspoons ground cinnamon (or pumpkin pie spice) 
  • 1 teaspoon baking powder 
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt 
  • ¾ cup mashed banana (from 2 very ripe bananas) 
  • ¾ cup grated carrots (from 1 medium carrot) 
  • 2 tablespoons unsalted butter (or dairy-free butter, melted) 
  • 2 large eggs 
  • 1 tablespoon vanilla extract 
  • 1/2 cup brown monk fruit sweetener (or brown sugar) 
  • 1/3 cup golden raisins 
  • ¼ cup chopped walnuts 
  • Non stick cooking spray (if not using muffin liners) 
For the frosting: 
  • 8 ounces ⅓ less fat cream cheese (left at room temp for an hour) 
  • 2 teaspoons vanilla extract 
  • ¼ cup powdered monk fruit sweetener (or powdered sugar)
DIRECTIONS: Preheat the oven to 350° F. Line a muffin tin with liners or lightly spray with nonstick cooking spray. Add the flour, cinnamon, baking powder, baking soda, and salt to a medium bowl and whisk to combine. Add the mashed bananas, grated carrots, melted butter, eggs, vanilla, and brown sugar to a large bowl. Whisk to combine. Add the raisins, walnuts and the dry ingredients to the bowl and use a spatula to fold until just combined and you see no more streaks of flour. Divide the batter evenly into the 12 muffin cups, filling up about ⅔ of the way up. Transfer the muffin tin to the oven to bake for 20-23 minutes, until puffed and a toothpick in the center of a muffin comes out clean. Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. While the muffins cool, make the frosting. Add the cream cheese, vanilla, and monk fruit to a bowl. Use a hand mixer to whip until evenly combined, about a minute. To assemble, pipe or spoon frosting onto each muffin. Any remaining frosting can be stored in an airtight container in the fridge and used to drizzle over fruit or spread on toast.
